Pav Bhaji counters in India are usually the busiest spot in the outlet. Staff are constantly:

The Aeonic Tabletop Induction Pav Bhaji Station is designed to fix this by taking the robust TCT induction platform and pairing it with a proper Pav Bhaji kadai that sits securely on a custom support above the hob. The 3.5 kW unit with 18″ kadai handles typical QSR loads; the 5 kW unit with 22″ kadai is built for very high volumes and faster turnaround.

Because the kadai is supported above the glass, we treat this station as a pure power-level machine:

  • Use high power levels to sauté onions and masalas quickly.
  • Drop to mid levels to merge vegetables and build the Bhaji.
  • Use lower levels to keep Bhaji hot at the counter without burning.

The timer then adds process discipline: once you find the right power + time combination for your signature Bhaji, you can train staff to follow the same cycle across all outlets.

Being tabletop, the station can be moved between different counters, events, festivals or pop-ups, as long as you have a suitable 230 V, single-phase supply.

        • The top structure is adapted so the kadai sits securely on a support above the hob for heavy stirring and mashing.

        So this is a specialised Pav Bhaji solution based on a proven general-purpose engine.

        In this configuration, the kadai does not sit in direct contact with the glass surface; it is supported above it. That means temperature-based control (pan-bottom °C) is not meaningful for this setup.

        For the Pav Bhaji station, you should operate only using the 10 power levels and timer, following your SOPs for taste and food safety.

        Choose 3.5 kW + 18″ kadai if:

        • You run a single busy outlet or café
        • You have moderate to high, but not extreme, peak loads
