The Aeonic Commercial Induction Double Jacket Boiling Pan is a bulk cooker designed for gentle, even, in-direct heating using a water jacket. It’s ideal for large-volume boiling, simmering and cooking of liquids and semi-liquids where you want to avoid burning and hot spots at the base. The Aeonic Double Jacket Boiling Pan is built for operations where large volumes of product must be heated evenly and safely over long periods—without burning at the bottom.

Instead of direct heat, the pan uses a DM-water-filled outer jacket to transmit energy from the induction system to the product. This in-direct heating method is particularly suitable for:

  • Boiling and simmering liquids
  • Cooking sensitive products that tend to stick or scorch on direct heat
  • Applications where temperature must be ramped up and controlled gently

Operators can choose the required power stage and set a target temperature using the digital controller. The jacket level gauge and pressure gauge provide continuous feedback on jacket condition, while the safety sensor cuts off heating if the set temperature is exceeded.

At the end of the cooking cycle, food is transferred using the electrically operated tilting pan, which eliminates the need to manually lift heavy vessels. The integrated mixer tap makes it easy to fill, top up and wash down, and the fully stainless construction supports hygiene and fast cleaning.

        A double jacket pan heats product in-directly through a water jacket rather than with direct flame or coil contact. This provides:

        • The DM water level indicator shows how much water is present in the jacket, helping ensure it is always within the safe operating range.

        The boiling pan is emptied by electrical tilting:

        • The operator uses the tilt push buttons on the control panel
        • The pan tilts forward smoothly and controllably
        • Product can be decanted into GN pans, trolleys or other containers

        During tilting, induction heating is automatically cut off for safety.

        All variants share the same core double-jacket and induction design. The difference is in lid operation:

        • Smaller pans:manual lid, easy to open and close by hand.
        • Larger pans: electrically operated lid opening and closing via push buttons, reducing effort when dealing with a bigger, heavier lid.

        Operators have:

        • An 8-stage power controller with display, to select the intensity of heating.
        • A temperature controller with digital display that lets them set a desired temperature; a sensor will cut off heating if the set temperature is exceeded.

        This combination allows both coarse power selection and fine temperature control.
