        It is designed for GN pans up to max size 1/1, 200 mm deep. You can use one full-size 1/1 pan or suitable combinations of smaller GN pans, as long as the overall footprint does not exceed 1/1.

        This unit is intended for warming and holding food at serving temperature, not for cooking raw food from scratch. Cook food in your main kitchen equipment, then transfer it into GN pans placed in the bain marie.

        The dry-boil protection is designed to safeguard the heater if the unit is operated without adequate water in the tank. It is a safety support, but staff must still check water levels regularly and follow operating instructions.

        Simply switch off and unplug the unit, allow the water to cool to a safe temperature, then use the front drain tap to empty the tank. Once drained, wipe the tank with a soft cloth and mild detergent as per your cleaning SOP.
